Description
The scientific name for Espadin is Agave Angustifolia, is the one most used to produce mezcal. According to the Mezcal Regulatory Council (CRM), it represents 80% of the agaves used to make this emblematic Mexican distillate.
It’s high preference on the part of the mezcal producers, in Oaxaca, is due to the fact that its maturation period is shorter in relation to the other mezcal agaves. It needs 6 to 7 years to mature, and it is the most cultivated.
