Description
Its scientific name is Agave Potatorum and among other common names it has is Papalometl, which comes from the Nahuatl word, butterfly. This name is given by the shape of its leaves that look like butterfly wings.
In Oaxaca, currently, almost all the mezcal communities make mezcal from Agave Potatorum. It’s currently a cultivated maguey and in some communities, it is still collected from the wild.
